Fried Stuffed Rice Balls "Arancini" is a fantastic dish fo your kids and your family :)

Arborio or Carnaroli rice | 80 gram |
Mozzarella cheese | 30 gram |
Grated parmesan cheese | 30 gram |
Olive oil | 5 ml |
Salt | 4 gram |
Black pepper | 4 gram |
Vegetable stock | 500 ml |
Onion | 20 gram |
White wine | 10 ml |
Tomato sauce | 100 gram |
Chopped parsley | 10 gram |
Butter | 20 gram |
Bread Crum | 50 gram |
Flour | 50 gram |
Frying oil | 500 ml |
FRIED STUFFED RICE BALLS "ARANCINI"的做法
In a pot add oil and the chopped onion. Add the rice and cook steering till the rice is transparent.
Add the wine and let it reduce. Now add the tomato sauce. Mix well and start adding vegetable stock and cook for about 10 to 20 minutes. The rice should be quite dry after this time, so don't add too much stock at the same time. Remove from fire and add, parmesan cheese and chopped sfer it the in a tray to make it cold.
When the rice is cold brush your hands with a bit of oil. Get a bit of rice, flat it and create a disk in your hands the put 1 cube of mozzarella, then close it creating a ball. Repeat the same step till all rice is finished.
In a bowl mix the flour with a bit of water till become creamy.
Pass the rice ball in the flour mixture and then in the bread crumb.
In a pot add the frying oil.
When the oil is very hot deep fry the arancini, till golden brown.
Transfer it the in a tray with paper towel to absorb th oil in excess.
Eat hot.
