1. Put ribs in cold water and turn on the burner till 10 mins after boiling

2. Heat up oil in a pan. add dou-ban, dried chili peppers, peppercorns, smashed garlic, onions till the oil turns red. Then add ribs in.

3. Add rock sugars, light soy sauce, and dark soy sauce and sauté till ribs are covered by sauce

4. Add hot water and simmer for 5 mins

5. Add potatoes, carrots, Napa cabbages and whatever veggie you like into the instant pot. Transfer ribs in as well. Add water till 95% food is covered.

6. Pressure cook for 20 mins
