BETH'S QUARANTINE THANKSGIVING (Cheddar Cheese Coins) _I

用料  

baking powder 1/2 tsp
salt 1/4 tsp
cayenne pepper a few shakes
essential
butter, chilled diced 1/4 cup
(sharp) shredded cheddar cheese 1/2 cup
egg yolk 1
flour
flour (90g) 1/2 cup +
plus (Beth) 1/4 cup (total = 3/4 cup)
plus (yt) 1/8 cup + 1.75 tsp

  1. prep:
    1. separate egg yolk
    2. cut up 1/4 cup butter and freeze briefly

  2. ---- make the dough ------
    Pulse to combine the flour, baking powder, salt, and cayenne pepper.

    Add the butter and pulse until a coarse meal develops.

    Then add the cheese, pulse until crumbly.

    Then add the egg and pulse until a coarse meal develops that sticks together.

    WHEN TO STOP: pinch the meal with your finger and it sticks together

  3. ---- shape the dough ----
    Transfer dough to a cutting board and roll out into a log 1 inches in diameter and 4 inches long (2.5cm x 10cm).

    HOW: press the crumbles to form a rough log, then dip on the crumbles. stamp the end to form flat edge.

    ***** don't overwork the dough! DON'T roll too much.

  4. ---- chill ----
    Wrap in parchment paper

    chill in the fridge for at least 1 hour or in the freezer for 20 mins before use. otherwise the cheese and butter may melt or the dough is too crumbly to work on


    **** You can also freeze this dough. Wrap tightly in parchment paper or plastic wrap. Then wrap in foil. Freeze up to 1 month.

  5. ---- slice the coins ----
    Cut the coins into 16 ¼ inch (6 mm) slices, transfer to a metal baking sheet lined with parchment paper.

    They don't spread much and can be fit into one tray. No need for too much space during baking

    (The parchment paper prevents them from burning on the bottom, while preserving their delicate texture. )

  6. ---- bake ----
    Bake at 350F for 15-20 mins (depends on how long you chilled the dough)

    WHEN IS DONE: They should be set in the center and golden brown around the edges

  7. ---- cool ----
    allow them to cool on the cookie tray. No need to move them to a cooling rack

  8. ---- serve ----
    Serve warm or at room temperature.

    warm: These are best eaten the day they are made.

    room temp: allow them to cool completely, and then transfer to an airtight container and leave them out on your countertop at room temperature.

  9. ---- pair ----
    Cheese coins pair beautifully with a glass of port, a glass of red or white wine, or something bubbly like a glass of Champagne, Prosecco or Cava would be great too!
