Asian-Flavored Tuna with Stir-Fried Vegetables的做法
½ cup nama shoyu or wheat-free tamari
1-inch knob of ginger root, thinly sliced
2 garlic cloves, crushed
2 teaspoons brown rice syrup or coconut nectar
10 ounces tuna or yellowtail, cut into 1-inch chunks (a white fish can
also be substituted, such as striped bass or cod)
1 tablespoon extra-virgin olive oil
1 teaspoon sesame oil
1 carrot, sliced on the diagonal
1 cup chopped broccoli, cut small
1 zucchini, sliced on the diagonal
1 head baby bok choy, sliced lengthwiseIn a bowl, whisk together the nama shoyu or tamari, ginger, garlic, and the
rice syrup or coconut nectar. Place the tuna chunks in the mixture and let
marinate for a few minutes.Set your broiler to high. Divide the marinated tuna chunks evenly between
2 grilling skewers. Broil the tuna skewers for 1 to 2 minutes, turn them over
and broil another 1 to 2 minutes on their opposite sides. Set aside.Heat the olive and sesame oils together in a sauté pan over high heat. Add
the carrot, broccoli, and zucchini, and stir to coat everything with oil.
Continue stirring as the vegetables cook for 2 minutes. Add the bok choy
plus ¼ cup of water. Cover the pot for 1 minute, allowing the vegetables to
steam slightly. Remove from heat.To serve, place the vegetables in a flat bowl and top with the tuna skewers.
Serve hot.
